When you think of cooking in the crock pot you usually associate it with heavy stews and out dated grandma recipes. On the Oprah show, Jessica Seinfeld uses the slow cooker to cook many things you would not think to cook in it; like whole small chicken, oatmeal and this worry-free lasagna. The lasagna looked so easy and tasty, I had to give it a try it. Lasagna is a family friendly recipe that can be adjusted to be as elaborate or as simple as you would like. This lasagna recipe makes great leftovers so invest in gladware and pack some for lunch! It was easy to put together, did not cost a lot, easy to clean up and my family loved the flavor. I also like the use of spinach to get more iron and folic acid.
All the ingredients for this recipe can be purchased for under $20.00 at ALDI Food in Golden Ring Plaza. I spiced up this recipe with 2 pounds of ground turkey, ½ tsp black pepper, 1 tsp sea salt, 2 onions and 3 garlic pegs, and 1/3 cup chopped fresh parsley. Sauté ingredients add the ground turkey and cook until meat is brown. Add the meat and sauce and finish the recipe as directed below. ALDI has the 28 ounce can of crushed tomatoes, get two cans and use the extra sauce to keep the meat moist. ALDI has all kinds of gourmet foods for less than other food stores. (The foods are the same quality so feel free to buy your ingredients there.)
Crock-Pot Lasagna Recipe
- 3 cans (14.4 ounces) crushed tomatoes
- 3 cloves garlic , finely chopped
- 2 Tbsp. dried oregano
- 1/2 tsp. kosher salt
- 1/4 tsp. red pepper flakes
- 1/4 tsp. freshly ground black pepper
- 2 containers (15 ounces each) fresh ricotta
- 2 cups (8 ounces) grated mozzarella
- 1/4 cup grated Parmesan
- 12 lasagna noodles (about three-quarters of a 1-pound box)
- 5 ounces (about 6 cups) baby spinach
In a medium bowl, combine the tomatoes, garlic, oregano, salt, red pepper and black pepper. In a separate bowl, mix the ricotta, 1 cup of the mozzarella and Parmesan.
In the bottom of a 5- to 6-quart slow cooker, spread a thin layer of the sauce. Top with 3 of the noodles (breaking to fit as necessary). Spread about 1 cup of the sauce over the noodles and layer with 2 cups of the spinach and 1 1/2 cups of the cheese mixture. Repeat twice more with the noodles, sauce, spinach and cheese mixture. Top with the remaining 3 noodles, sauce and 1 cup mozzarella.
Cook on low, covered, until the noodles are tender—especially in the center of the lasagna—about 3 to 3 1/2 hours.
