This is an incredibly easy pasta dish to make. The best part of this dish is you truly only need 3 items to make it. Gnocchi’s are a traditional Italian dish and can be dressed with many different types of sauces ranging from a red sauce to just garlic butter and of course, freshly grated cheese. Here are the steps to make Gnocchi’s.
Preheat your oven to 450 degrees.
Wash and dry 4-5 Idaho Potatoes, prick them with a fork and bake at 450 degrees for 1 hour or until soft to touch. You want to be sure they are fully cooked and then let them cool so they will be easier to work with.
Slice open the potato, and begin to scoop out the inside. Be sure to eliminate any potato skin as it will taste bitter.
If you have a ricer at home, you can run the potato through this to get rid of any lumps, if not a good old hand masher will work fine.
Once you have mashed the potatoes to a smooth consistency you can begin adding the last 2 ingredients. The ratio here is as follows:
For every 1 cup of mashed potato add 1 egg and 1 cup of flour
Season with salt to taste
Mix the indgredients until they are firm enough to roll out and roll into a rope about the thickness of your index finger. You can cut them into whatever size you prefer, however I like them to be about an inch long. You can use a gnocchi board to shape them if you like, a fork also works well or you can do like I do and lightly pinch them in the center to form a bowtie shape. Shaping them will help them to hold a sauce better and it looks like you spent hours doing this instead of minutes.
Bring a pot of water to a boil and salt well. Add your gnocchi in small batches and boil until they float to the top. Test one for consistency and serve with your favorite sauce.
Here is a great tip for making these ahead of time:
Gnocchi’s freeze very well. You will freeze them raw and take them out to cook as needed. Do not take them out to thaw, frozen gnocchi’s go straight into the boiling water or else you will have a mushy mesh. They will need additional boiling time as the frozen gnocchi will take the temperature down quickly, also do in small batches. Set up a sheet tray next to your work station and be sure to spray it with cooking spray before you place any gnocchi’s on there, this will make it easier for you to get them off when they are frozen. Cut them and place them in rows on the sheet tray and freeze. After a few hours take out the trays and scoop the frozen gnocchi into freezer bags for convenience.
