There is a certain little four-year old who refuses to eat, well just about everything! He will sometimes eat fruit or yogurt, but he prefers snack foods. Most kids, at a certain age, will only eat certain foods and usually there not the healthiest.
Luckily the major majority of kids love to eat chicken fingers! Chicken fingers would be classified as healthy meal but if you buy them ready made in the store you could be looking at some issues. Most ready made chicken finger/nuggets have preservatives in them. Some chemical preservatives can be damaging to your health. Benzoates and sulphites may trigger allergies. Butylates may cause liver and kidney problems and high blood pressure. Butylated hydroxyanisole (BHA) may cause cancer and liver disease. Even natural preservatives can be unhealthy for you if too much is consumed. Natural preservatives would include salt, sugar, vinegar, alcohol, citric acid and ascorbic acid. For example too much ascorbic acid can cause cramps, headaches and vomiting.
Homemade (PRESERVATIVE FREE) chicken finger recipe:
first your going to need 2 bowls, 2 forks, 1 paper bag, and a lot of counter space.
I package of chicken breasts (I usually use the frozen chicken that are sold in bags)
1 package of Ritz crackers
2 packages of saltine crackers
1 piece of multi-grain bread
1/4 cup milk
About 3 cups of whole wheat flour
In the first bowl put the 3 cups of flour. Place the eggs and milk in the second bowl and mix well. Crush the saltine, Ritz crackers and bread, mix together. You can use a blender to crush the crackers and bread, it saves time and works really well. Put your crumb mixture into your paper bag. You can put some seasoning to taste in the bag, if desired, and shake it up. Clean the chicken and cut it into small strips. Take a strip of chicken and dip it into the flour and cover it well. Take the flour dipped piece and dip it into the egg. After you have covered it in egg put it into the paper bag and shake it really well for a few seconds. After you have completed this processes with all your chicken strips you can start cooking. The best ways to cook these would be in peanut oil.
For a healthier meal you can always cook them in the oven. You have to brush the chicken fingers with butter, on both sides, otherwise they will be soggy and the cracker crumbs will fall off.
These also go great with homemade french fries. Just chop up some potatoes and cook them in oil. You should always cook the fries before the chicken because they take a lot longer to cook.
If packaged correctly these Will stay good in the freezer for months!
