Here is an easy and healthy idea for dinner tonight; buy some boneless pork chops, not too thin, you want to be able to make a slit in them and stuff them. One chop per person is an ample serving. You will need chopped dates, chopped apple, chopped walnuts, salt, pepper and agave nectar. For each chop you will need about one tablespoon of each ingredient, salt and pepper to taste. Fresh cracked pepper is the best in any dish. Lay the peppercorns on the counter and gently press down on them with a fry pan. The taste is so much better than a pepper mill. Ask your local butcher shop to cut a slit in the chops for you if it seems difficult. Spoon the mixture in each cavity and secure with a toothpick. Fry the chops on both sides about 4-5 minutes.
Meanwhile, in another pan toss a few mini carrots in a small amount of water. Use a frypan. Turn heat on high and bring to a boil, about 1-2 minutes. Drain the water, leaving about a teaspoon of water. Put the pan back on the heat, push the carrots to the side, throw a pat of butter on the cleared side to melt, and when melted, add a tablespoon or so of brown sugar and a pinch of ground ginger. Toss the carrots around in this and voila, glazed carrots.
