Have you ever wanted to make delicious homemade pasta but have been too intimidated to do it? I’m here to tell you how easy it is! I spent years wasting money at the grocery store buying fresh pasta. I never knew that making it could not only save me hundreds of dollars in the long run but be healthier and so simple. You will need a couple of kitchen tools to get you started.
The first tool you will need is a past a machine. You can purchase one of these very inexpensively at your local super store. I picked my pasta machine up for less than 30 dollars at Bed Bath and Beyond. You don’t need anything fancy, one that clamps onto your kitchen counter will work great. The other tool you will need is a food processor. I can’t live without my food processor. I use the Cuisinart Pro Custom. I love this particular one because it comes with a separate pasta blade. The Cuisinart food processor is a little more expensive than some. You can find a less expensive model again at your local super store.
The recipe I use is made with everyday ingredients that most people have in their pantry and refrigerator. The recipe is this:
8 ounces flour 1 Tablespoon olive oil
½ teaspoon salt 1 to 2 Tablespoons warm water
4 ounces eggs ½ teaspoon olive oil (for coating)
1. Place flour and salt in work bowl of food processor fitted with metal blade. Turn machine on/off once.
2. Beat eggs lightly with fork in a measuring cup (this makes it easier to pour). Turn machine on, pour eggs through the feed tube and let machine run until mixture resembles course meal, about 30 seconds. While machine is running pour 1 Tablespoon olive oil through feed tube in a thin steady stream. Pour 1 Tablespoon water through feed tube a few drops at a time and let machine run nonstop 30 seconds. Remove the cover and scrape down sides of bowl. Place cover back on and let machine run nonstop for another minute or until dough ball forms. Add remaining Tablespoon of water a couple drops at a time and run 1 to 2 minutes longer.
3. Remove your dough ball from bowl and shape into flat 6 inch disc. Rub the disc with ½ teaspoon olive oil. Place dough in a large glass bowl and cove with damp cloth. Let rest for 30 minutes before rolling through pasta machine.
At this point you can decide if you want to make lasagna noodles, fettuccini noodles or spaghetti noodles. Every pasta machine has at least these three settings.
You will now divide your dough into 4 pieces. Adjust the rollers on your pasta machine to the widest setting. Flatten dough into a small square shape and flour lightly. Run the dough through the rollers once. Fold in thirds and run though rollers again. Repeat folding and rolling, until dough is smooth (it may take 4 or 5 trips through the pasta machine).
Reset rollers for the next thinner setting. Do not fold the dough. Flour and run dough through machine. Repeat on each thinner setting remembering to flour each time until dough is a long, thin sheet. Place dough on towel to dry a little for 10 to 15 minutes. Repeat with remaining pieces of dough. At this point you are done with your noodles if you are making lasagna. If you are making fettuccini feed the dough through the wider cutting blades of the pasta machine. To make spaghetti feed the dough through the thinner cutting blades.
You are now ready to add your simple homemade pasta to salted boiling water and enjoy with your favorite pasta sauce. I recommend a light alfredo (always a hit with my children).
